Long legged, uniformly smooth and light cream colored, it resembles a bean sprout with a tiny mushroom cap.  They are shiny, but no slimy; firm, but not soft; and leave a hint of pepper taste on the tongue.  They are a crispy addition to almost any salad, they are great with stir fry vegetable dishes.
